A New Year

Well, it's 2013 and I'm ready for spring. One of the reasons I'm so ready is because my girlfriends and I are cruising to Jamaica in April. In one of my books, Lynna's Rogue, the main character is shipwrecked in Jamaica and I did loads of research on the tropical island paradise for the book. I've always wanted to go there and have been planning the trip for years, but just never made it. I am so excited to finally be going!
Jamaica makes me think of warm weather, and I can hardly wait for it to get here. However, since warmer weather often entails the wearing of a bathing suit, I have decided to go on a no grain diet. Sounds easy right? Wrong! Who knew so many foods have grain in them? Several foods are difficult for me to live without although I have to admit bread is the most painful. I come from a Southern family where biscuits are a mainstay at every meal. Country ham biscuits. Sausage gravy and biscuits. Just a plain ole butter biscuit. Sunday dinner didn't help much either.
I visited my son and his family this weekend and we spent the day in Boone, NC. While there, we ate dinner at Dan'l Boone's Restaurant. Man, what a feast. They brought out this platter of country ham biscuits that would absolutely melt in your mouth. I hadn't had grain of any sort in 5 days, but I simply wasn't strong enough to resist those biscuits. I ate two, even though I had biscuits made from almond flour, that my sweet daughter in law made for me, the night before. I was surprised at how good they were. Only drawback is that almond flour is rather pricey. I think I'll go to Sam's and get a large bag of almonds and make my own flour. If anyone has any good no grain recipes I would love for you to send them to me.
